Mealpod.us is the brain child of sisters, Nicole Caulfield and Melissa Blickem. Over the last few years, both sisters have become increasingly interested in nutrition. Nicole has lost over 30lbs and become an avid runner. During her weight loss, Nicole has tried vegetarian and an Ornish inspired pescatarian diet before settling into a Gluten Free lifestyle. Melissa lost over 100lbs over five years, calorie counting her way through high protein and high fiber variations before finding ancestral eating via the Paleo Diet to be her key to beating both high blood pressure and water retention issues.
Across the miles between New Hampshire and Illinois, there was always discussion (not arguing!) about which way of eating was the best. The one thing both sisters agreed on, always, was the key to eating nutritionally is PLANNING AND PREPARATION.
Melissa focused more on what we call Refrigerator Pods. Most weeks she cooked her breakfasts and lunches for the week each Sunday to bring to work. This worked well, allowing her to create meals that fit her specific nutritional macros.
Nicole and her husband, Michael, crafted the foil packs of the Mealpod freezing system, through trial and error, in order to feed them both nutritious and EASY meals that fit their busy lifestyle.
With Paleo and Gluten Free living being very similar, Melissa and Nicole started sharing recipes more and more often. Nicole brainstormed the Mealpod website, as an art teacher, she easily assumed the Art Director role creating the graphics, templates and website. As the older sister, Melissa handles the data entry role and likes to always have a plan.
Melissa and Nicole hope their journey to making nutritional, healthy, whole food eating easy and less time consuming helps others make Mealpod.us become their key to opening the door of better health.
